3 Ingredient Guilt Free Dark Chocolate Truffles
I had this idea for some super simple truffles and I am MORE than in love with how they turned out. Their 3 ingredients are not only easy to find in South Asia, but they’re sugar free, egg free, and it would honestly be super easy to make them vegan.
3 Ingredient Sugar Free Truffles
1 Amul Dark Chocolate bar
250 grams paneer
10 dates, pitted
-
Soak the pitted dates in 1 cup boiled water for 5 minutes. Save the water for later.
-
Meanwhile, break the dark chocolate bar up and melt in the microwave stirring every 30-45 seconds. You can also melt on top of the stove — fit a glass or metal bowl on top of a pot of boiling water and stir until melted.
-
After the chocolate is melted and dates have been soaked, add the paneer, melted chocolate, and pitted dates to your high speed blender. While blending on high, slowly pour in the water from the dates until the mixture is smooth and blended (I ended up pouring in about half of the water).
-
Pour the mixture in a bowl and refrigerate for 4-6 hours until firm. Scoop the mixture into teaspoon sized balls and roll in cocoa powder.
-
Store in the refrigerator for 10 days and enjoy with a cup of coffee!
**To make it vegan, use vegan chocolate and silken tofu
**If making in the States, use 125 grams semi sweet chocolate and 250 grams ricotta cheese.
